Old Pilot’s Gin – Barrel Aged Gin is our award winning gin rested in first fill Croatian and American oak barrels. Botanical ratios are slightly changed but we still use 6 Croatian handpicked botanicals from Mediterranean and continental part of Croatia. After distillation gin in rested in five different barrels. They differ by volume, type of oak, toasting/charring levels, preparation, … each giving its own signature and complexity to the final spirit. (0.7L, 45.5%)
